Sidney Schutte – Recipient of Two Michelin Stars
His Dutch heritage and passion for travel have combined to provide him with a unique perspective as head of Cocina de Autor restaurant. Four years in Asia shaped his palate and inspired him to present different taste sensations within a single dish. Ingredients themselves are the source of inspiration.
Sidney Schutte gained extensive experience in prestigious kitchens throughout Europe and Asia, including those run by Dutch top chef Richard Ekkebus at Amber, a two Michelin star restaurant in Hong Kong; Roger Souvereyns, of the two Michelin-starred De Scholteshof in Belgium; and Jonnie Boer, acclaimed chef and owner of restaurant De Librije in Zwolle. With Schutte’s support, De Librije earned its third coveted Michelin star. Just seven months after opening, Librije’s Zusje Amsterdam was awarded two Michelin Stars under Schutte’s command. .
Schutte has been named “SVH Meesterkok,” the highest recognition that a chef can obtain in the Netherlands, and was named Chef of the Year 2017 by Gault & Millau.
He started cooking at the young age of 14, and unsure of what he wanted to do in the future, kept it as a side job while studying management and entrepreneurship. After receiving his degree, he realized his passion was for the culinary world and wasted no time in returning to his work in the kitchen.
For three years he worked at the two Michelin-starred restaurant De Bokkedoorns, and then served in some of the best restaurants in the Netherlands, where he trained in every section of the kitchen to become a complete chef.
Frank has organized two cooking events with one of his best friends, Tjitze van der Dam, where he cooked with a different chef every hour for 24 hours. The first edition had chefs in attendance with a total of 24 Michelin Stars and the second edition had a total of 36 Michelin Stars, including those earned by Sidney Schutte.
He loves the creative aspect of cooking the most, because you never stop learning. As the son of a farmer, he loves working with fresh ingredients.
As part of Grand Velas, working with Sidney Schutte has given him the chance to grow and work with a motivated team. His goal is to delight people by providing them with an experience they will never forget. Together with Vincent Colauto, he aims to ensure that Cocina de Autor at Grand Velas Los Cabos becomes one of the best restaurants in Mexico.
Originally from Amsterdam, Holland, Chef Colauto has developed his career as a chef in various restaurants, many in his home country.
In 2002, he worked with chef Sidney Schutte at De Librije, a Michelin-starred restaurant. From 2005 to 2016 he served as Head Chef of restaurant Duinzicht at the Fletcher Hotel in the Netherlands. He concluded his training at the ROC and Spermalie restaurants in Brussels, as well as Katseveer, recipient of one Michelin star.
He currently oversees the Cocina de Autor kitchen at the Grand Velas Los Cabos resort.
Grand Velas Los Cabos guests’ have full access to the restaurant as part of the Luxury All Inclusive Plan. Outside visitors (ages 18 and over) are also invited to enjoy this magnificent Los Cabos dining venue.
